Ingredients:
  • (1 cup) all-purpose flour
  • (1 cup) whole wheat flour
  • (1 3/4 cups) oat bran
  • (3/4 cup) packed brown sugar
  • (1/3 cup) nonfat dry milk
  • (1/4 cup) flaxseed
  • (4 tsp.) ground cinnamon
  • (2 tsp.) baking soda
  • (2 tsp.) baking powder
  • (1/2 tsp.) salt
  • (2 cups) shredded carrot
  • (2 cups) Granny Smith apple, chopped
  • (1 cup) raisins
  • (1 cup) fat-free milk
  • (1/4 cup) canola oil
  • (2 tsp.) vanilla extract
  • (3 large) egg whites
  • (1) thin-skinned orange, unpeeled and quartered

These muffins are chock full of carrot, apple, raisins and oranges.

    Instructions

  1. 1Preheat oven to 375°F. Place 28 paper muffins cups into muffin pans and spray with cooking spray.
  2. 2In a large bowl, whisk together flours, oat bran, brown sugar, dry milk, flaxseed, cinnamon, baking soda, baking powder and salt.
  3. 3Add carrot, apple and raisins, stir to combine. Use your hand to make a hole in the center of the mixture.
  4. 4Process milk, oil, vanilla, egg whites and orange segments in a food processor until smooth. Pour into the hole you created in the flour mixture and stir until combined.
  5. 5Fill each muffin cup with 3 Tbsp. batter. Bake 20 minutes, or until spongey when touched. Cool on a wire rack and serve.
